Cosa Nostra Recipe

Ingredients: Serves 4

2 pizza base mixes
225 g/8 oz/1 small can chopped tomatoes, drained
50 g/2 oz/0.5 cup cooked French (green) beans, cut into short lengths
1/2 small red or green (bell) pepper, finely diced
10 ml/2 tsp capers
60 ml/4 tbsp grated Mozzarella cheese
5 ml/1 tsp dried oregano
A little olive oil
Passata (sieved tomatoes)
Grated Pecorino cheese


Make up the pizza base mixes and knead gently into 1 ball. Divide the dough into quarters. Roll out each quarter to a 20 cm/8 in round. Divide the tomatoes, beans, pepper, capers, cheese and oregano between the centers of the dough rounds. Brush the edges with water. Draw the dough up over the filling to form parcels. Place sealed sides down on an oiled baking sheet and brush the parcels with oil. Bake in a preheated oven at 200C/400F/gas mark 6 for about 20 minutes until golden brown. Transfer to warmed plates and spoon a little hot passata over. Sprinkle with grated Pecorino cheese before serving.
