Tropical Salad Recipe

Ingredients: Serves 4

2 ripe avocados
15 ml/1 tbsp lemon juice
1 small, ripe mango, diced
2 kiwi fruit, sliced
4 spring onions (scallions), chopped

100 g/4 oz seedless (pitless) black grapes
100 g/4 oz/1 cup white hard cheese, diced
45 ml/3 tbsp cider vinegar
5 ml/1 tsp clear honey

30 ml/2 tbsp sesame oil

Freshly ground black pepper

15 ml/1 tbsp sesame seeds

Method:

Halve the avocados, discard the stones (pits) and scoop out the flesh, leaving the shells intact. Place the shells in small dishes. Cut the flesh into neat pieces and place in a bowl. Toss in the lemon juice. Add the mango, kiwi fruit, spring onions, grapes and cheese. Blend together the vinegar, honey, oil and a little pepper. pour over the salad and toss gently. Pile back into the avocado shells and sprinkle with a few sesame seeds before serving.
