Tomato and Avocado Salad Recipe

Ingredients: Serves 4

4 lettuce leaves
400 g/14 oz/l large can tomatoes

Freshly ground black pepper
90 ml/6 tbsp French Dressing or use bottled
30 ml/2 tbsp lemon juice
2 firm ripe avocados


Tear up the lettuce and divide between four small bowls. Drain the tomatoes over a jug (keep the juice to drink). Divide the tomatoes between the bowls. Halving them if large. Sprinkle with pepper. Mix the well shaken dressing and lemon juice in a bowl. Halve the avocados, take out the stones (pits) and scoop out the flesh in pieces with a spoon. Toss the pieces at once in the dressing and spoon the fruit and dressing over the tomatoes.
