Pears with Walnut Whip Dressing Recipe

Ingredients: Serves 6

6 ripe dessert pears
Lettuce leaves
75 g/3 oz/0.5 cup walnut halves
150 ml whipping cream

10 ml/2 tsp lemon juice
5 ml/1 tsp caster (superfine) sugar
30 ml/2 tbsp Mayonnaise

5 ml/1 tsp dried tarragon
Salt and freshly ground black pepper

Small parsley sprigs

Method:

Peel, halve and core the pears and arrange on a bed of lettuce on six individual plates. Reserve six walnut halves for garnish and finely chop the remainder. Whip the cream with the lemon juice and sugar. Fold in the mayonnaise, chopped nuts and tarragon. Season to taste. Spoon over the pears and garnish with the reserved walnuts and small parsley sprigs.
