Pawpaw Pecan Cocktail Recipe

Ingredients: Serves 4

2 ripe pawpaws
1 fresh sweet grapefruit
Juice of 1 lemon
30 ml/2 tbsp Kirsch, gin or Cointreau

4 cos (romaine) or Chinese (stem lettuce) leaves
60 ml/4 tbsp chopped pecan nuts
Mint leaves
4 cocktail cherries

Method:

Peel the pawpaw and cut into slices, removing and discarding the black seeds. Cut the grapefruit into segments. In a bowl, combine the pawpaw with the grapefruit segments. Sprinkle with the lemon juice and liqueur of your choice. Serve on lettuce leaves and top with the pecan nuts. Garnish with mint leaves and cocktail cherries.
