African Queen Peanut Dip Recipe

Ingredients: Serves 4

225 g/8 oz/2 cups raw peanuts

120 ml/4 fl oz/0.5 cup hot water

45 ml/3 tbsp clear honey
150 g/5 oz creamed coconut

Pinch of chili powder
Salt
Mixed fruit pieces

Method:

Place the peanuts on a baking sheet and toast for 3 minutes. Place in a blender or food processor and puree with the hot water. Add the honey, coconut cream, chili and salt to taste and blend to a puree. Serve with wedges of apple, pear, banana, peach or pineapple chunks.
