Some of the following are light enough
for starters before a not-too-substantial meal course. But many are
hearty and nutritious enough for a complete meal if served with lots
of crusty bread. Soup is a great way to get all the family -
especially fussy children - to eat lots of vegetables. Puree the whole
thing in a blender or food processor if lumps are not popular in your
household.
Another wonderful thing about soup is
that no quantities are set in stone. Sling in the odd extra root
vegetable if you have it, or omit the onion if you'd rather. Always
taste the soup and add more seasoning if necessary before serving. |
