Simple Sweetcorn Soup Recipe

Ingredients: Serves 4

5 ml/1 tsp oil
1 onion, chopped
450 g/1 lb potatoes, sliced
350 g/12 oz/1 large can sweetcorn (corn)
900 ml/1.5 pt/3.75 cups vegetable stock
Salt and freshly ground black pepper

Method:

Heat the oil and fry (saute) the onion for 3 minutes. Add the remaining ingredients. Bring to the boil, then simmer for 30 minutes. Blend, mash or leave lumpy. Reheat if necessary and serve hot.
