Peasant Cabbage Soup Recipe

Ingredients: Serves 6

40 g/1.5 oz/3 tbsp butter or margarine

1 large onion, finely chopped
1 large carrot, finely chopped
1 large potato, finely chopped
1/4 green cabbage, finely shredded

1 red (bell) pepper, finely chopped

4 tomatoes, chopped
425 g/15 oz/1 large can haricot (navy) beans, drained
1 liter vegetable stock

1 bay leaf
Salt and freshly ground black pepper

Method:

Melt the butter or margarine in a large saucepan. Add the onion, carrot and potato and fry (saute), stirring, for 2 minutes. Add the remaining ingredients, bring to the boil, reduce the heat and cover. Simmer gently for 30 minutes. Discard the bay leaf and serve.
