Noodle Soup Recipe

Ingredients: Serves 4-6

1.75 liters/3 pts/7.5 cups vegetable stock
Salt
5 ml/1 tsp lemon grass, chopped

5 ml/1 tsp soy sauce
175 g/6 oz vermicelli

Method:

Bring the stock to the boil with the salt, lemon grass and soy sauce. Break the vermicelli into small pieces and add to the pan. Simmer for 5 minutes until just tender. Check and adjust the seasoning if necessary. Serve hot.
