Milk Soup with Croutons Recipe

Ingredients: Serves 4

1 slice wholemeal bread, cubed

Butter or margarine, for frying

300 ml/0.5 pt/1.25 cups milk
1 egg, beaten
5 ml/1 tsp curry powder

Freshly ground white pepper

Pinch of dried basil


Fry (saute) the bread in a little butter or margarine until crisp to make the croutons. Heat the milk with a pinch of salt. Slowly add the egg and curry powder. Stir and heat until thickened, without allowing the soup to boil. Season with salt, pepper and basil. Ladle into warm bowls. Serve sprinkled with croutons.
