Chinese Leaf Chowder Recipe

Ingredients: Serves 4

375 g/13 oz Chinese leaves (stem lettuce)
300 ml/0.5 pt/1.25 cups vegetable stock
2 onions, finely chopped
3 tomatoes, finely chopped
50 g/2 oz/0.5 cup salted peanuts, crushed
15 ml/1 tbsp smooth peanut butter

Freshly ground white pepper
Pinch of chili powder


Shred the Chinese leaves very finely, especially any stems. Put the stock in a large saucepan and pack in the leaves. Cover tightly. Bring to the boil and cook for 3 minutes. Remove from the heat, uncover the pan and stir in the remaining ingredients except the pepper and chili powder. Cover and cook over a gentle heat for 5 minutes or until the onions are tender. Season with pepper and chili powder to taste. Serve very hot.
