Chilled Tomato Soup Recipe

Ingredients: Serves 4

400 g/14 oz/1 large can chopped tomatoes
15 ml/1 tbsp red wine vinegar

15 ml/1 tbsp olive oil
45 ml/3 tbsp creme fraiIche

2.5 ml/0.5 tsp made mustard

5 ml/1 tsp dried basil
Salt and freshly ground black pepper

Method:

Rub the tomatoes through a sieve (strainer). Add all the remaining ingredients and mix well. Season to taste and chill before serving.
