1 ripe avocado
2 tomatoes, skinned, seeded and chopped
15 ml/1 tbsp clear honey
Juice of 1 orange
Juice of 1 lemon
300 ml/0.5 pt/1.25 cups water or dry white wine
Method:
Halve and stone (pit) the avocado and
scoop out the pulp. Place in a blender or food processor with the
tomato pulp, honey, orange juice, lemon juice and water or wine. Blend
the mixture to a puree. Serve chilled.
