Pasta Nicoise Recipe

Ingredients: Serves 4

225 g/8 oz/2 cups pasta shapes

5 ml/1 tsp oil
2 garlic cloves, crushed
1 onion, chopped
4 tomatoes, skinned and chopped

15 ml/1 tbsp tomato puree (paste)

2.5 ml/0.5 tsp dried oregano
2.5 ml/0.5 tsp dried marjoram
Salt and freshly ground black pepper

A few black olives (optional)

Method:

Cook the pasta in boiling salted water until just tender. Drain. Meanwhile, heat the oil and fry (saute) the garlic and onion for 5 minutes. Stir in the tomatoes, tomato puree and herbs. Add the drained pasta and warm through, stirring. Season with salt and pepper. Garnish with a few olives, if liked, before serving.
