Green Pepper Dhal Recipe

Ingredients: Serves 4

225 g/8 oz/1.5 cups split red lentils

600 ml/1 pt/2.5 cups vegetable stock

1 small bay leaf
30 ml/2 tbsp sunflower oil

1 onion, chopped
1 green (bell) pepper, chopped

1 garlic clove, crushed
2.5 ml/0.5 tsp ground cumin

2.5 ml/0.5 tsp turmeric
2.5 ml/0.5 tsp chili powder
2.5 ml/0.5 tsp ground coriander (cilantro)
Salt and freshly ground black pepper

Method:

Put the lentils in a saucepan with the stock and bay leaf. Bring to the boil, reduce the heat and simmer for 20 minutes until almost tender and most of the liquid has been absorbed. Meanwhile, heat the oil in a separate pan. Add the onion, pepper and garlic and fry (saute) for 5 minutes until golden and tender. Stir in the spices and fry for a further minute. Add to the cooked lentils and cook for a further 5 minutes, stirring. Season to taste.
