Cheese Herb Potatoes Recipe

Ingredients: Serves 4

4 large even-sized potatoes, scrubbed

Olive oil
Salt
100 g/4 oz/1 cup Cheddar cheese, grated
25 g/1 oz/2 tbsp butter or margarine, softened
15 ml/1 tbsp chopped parsley

15 ml/1 tbsp snipped chives

10 ml/2 tsp chopped thyme or tarragon
Freshly ground black pepper

Method:

Prick the potatoes all over with a fork. Rub with oil, then salt. Bake in the oven at 190C/375F/gas mark 5 for about 1 hour until tender or place on a plate, cover with kitchen paper and microwave for 1216 minutes, depending on the power of your microwave. Meanwhile, mash the cheese with the butter or margarine, the herbs and a good grinding of pepper. When the potatoes are cooked, transfer to plates and cut a large cross in the top of each. Squeeze gently so the splits open slightly. Top with the cheese mixture and either serve straight away or flash under a hot grill (broiler) to melt completely. Serve.
