100 g/4 oz/1 cup desiccated (shredded)
coconut
2 bananas, mashed
75 g/3 oz light brown sugar
Grated rind of 1 lime
30 ml/2 tbsp dark rum
Good pinch of baking powder
Oil, for deep-frying |

Method:
Put 25 g/1 oz of the coconut to one
side. Mix the remainder with the bananas, sugar, lime rind, rum and
baking powder, working well in together. Shape into small balls and
roll in the remaining coconut. Deep-fry in hot oil for 3 minutes until
golden brown. Drain on kitchen paper and serve hot.
