Peach Clafoutie Recipe

Ingredients: Serves 4

420 g/14.5 oz/1 large can peach slices, drained reserving the juice

1 quantity Basic Pancake Mix
25 g/1 oz flaked almonds

Icing (confectioners') sugar, sifted

Method:

Arrange the peaches attractively in a greased shallow ovenproof dish. Make up the pancake mix and pour over. Sprinkle with the almonds. Bake in a preheated oven at 200c/400F/gas mark 6 for about 30 minutes until risen and golden brown. Dust with sifted icing sugar and serve hot with the juice.
